Central prep-kitchen cold rooms

Positive cold rooms (0–4°C) for meat, fish and vegetables, negative rooms (−18°C) for frozen goods. Compressor maintenance (Bitzer, Copeland, Tecumseh), condenser/evaporator cleaning, door and gasket adjustment, leak search.

Mobile cold tables and insulated boxes

Wheeled cold tables (Iberna, Polaris, Coldline) and insulated boxes with or without active cooling. Circuit maintenance, wheel checks, transport-shock protection, door-seal verification.

Temporary event refrigeration

Regulatory context and industry standards

Catering and events in Morocco are subject to ONSSA for food safety across the full chain: reception, preparation, transport, service. HACCP principles apply strictly. Refrigerated transport is regulated (refrigerated vehicles, insulated boxes with loggers where possible). Event venues and hotels hosting the caterer apply the same rules. Invoicing is issued with ICE and RC. Municipal hygiene may inspect the central kitchen. Refrigerant handling (R404A, R452A) is regulated. This backdrop explains why the caterer needs a provider that leaves a written trail usable for the HACCP file.

Prep-kitchen cold room drifting up before Saturday event

The caterer finds on Friday morning that the cold room is at 8°C instead of 3°C, event the next day with a large stock. Top priority. The technician diagnoses (dirty condenser, dead fan, defective defrost), repairs if possible or recommends transferring part of the stock to a backup cold room or temporary ice boxes.

Seasonality and year-round needs

The absolute peak is wedding season (June–September), with a July–August max. Marrakech, Casablanca, Fès, Meknès see very high density with upscale weddings (riads, 5-star hotels, private villas). Eid al-Fitr and Eid al-Adha bring large family orders. Ramadan shows dense evening activity (banquets, corporate). Year-end (November–December) is corporate events and winter weddings. Winter (January–February) is quieter but never stops. Major preventive review is planned in April–May before wedding peak and before November before corporate season. Emergency response on event day is a critical organisational issue; sensitive dates are communicated to the team in advance.
